功能性：

2、属花色苷类；具有抗氧化、抗病毒、抗突变和保护眼睛等功效。在常温下，外观为红色或深红色带易溶于水、乙醇。水溶液色调及稳定性受PH影响：酸性时呈稳定的红色或粉红色，中性时呈紫色，碱性时，呈不稳定的蓝色或蓝紫色
使用范围：适用于果汁（味）饮料、糖果、配制酒、果酱、调味酱、蜜饯、糕点、果冻等领域的着色或补色。

储存：贮存在干燥、阴凉、通风处；产品开封后，若未使用完，要及时封口；因长时间放置，可能导致微生物生长变质，故应尽可能将所配置的溶液在12小时内用完。
